High grown by indigenous smallholder farmers in the soaring mountains surrounding the historic city of San Cristóbal de las Casas in Mexico’s Chiapas Central Highlands, this beautifully balanced Mexican Turquesa coffee is the product of might, love, culture, and perseverance. Grown under the watchful eye of the indigenous-led Zapatista Army of National Liberation, which controls much of Chiapas, farms must be kept small and must grow and harvest their coffee according to traditional methods. Further nurtured by rich volcanic soil, a temperate climate, and a natural old-grown shade canopy, this lovely Turquesa bean, named for the turquoise sky that soars above the Central Highlands, is large, full, and wonderfully round with winey aromatics and sweet flavor notes of milk chocolate, soft nut, and a hint of citrus. Medium roasted with good body and moderate acidity.
